Why This Soup is So Healing

From the bone broth, known for its gut-healing and immune-boosting properties, to the garlic and cumin, which have natural anti-inflammatory benefits, this soup is a bowl of wellness. The sofrito—a blend of peppers, onions, and cilantro—is the base of Puerto Rican cuisine, adding depth and nutrition to the dish. And let’s not forget the avocado on top, which delivers healthy fats and an extra creamy texture.

Puerto Rican Chicken & Rice Soup Recipe

Ingredients:

✅ 1 (32 oz) box of organic chicken broth or organic bone broth
✅ 1 package of organic boneless, skinless chicken thighs
✅ ½ bag of frozen organic rice
✅ ½ cup of Sofrito (see recipe below)
✅ 3 cups of water
✅ 2 teaspoons of Better than Bouillon (chicken flavor)
✅ 4 oz of tomato sauce
✅ 3 cloves of fresh garlic, crushed
✅ 1 teaspoon of cumin
✅ 1 teaspoon of oregano
✅ 1 teaspoon of Himalayan salt
✅ ½ teaspoon of black pepper
✅ 1 avocado (optional, sliced for garnish)

Sofrito – The Flavor Base for Every Puerto Rican Dish

✅ 2 organic green bell peppers
✅ 1 organic yellow onion
✅ 1 bunch of organic cilantro
✅ ¼ cup of water

👉 Blend all ingredients until smooth. Store in small jars for easy use.

How to Make It:

  1. In a large soup pot or Dutch oven, bring the chicken broth, water, and Better than Bouillon to a boil.
    2️. Add chicken thighs and crushed garlic. Let cook until chicken is fully done. (Shred or leave whole, as preferred.)
    3️. Stir in sofrito, tomato sauce, cumin, oregano, salt, and pepper. Simmer for 20 minutes.
    4️. Add frozen rice and cook for an additional 5 minutes.
    5️. Serve hot, topped with fresh avocado slices if desired.
